What is Tofu Scramble?

Tofu scramble is considered THE vegan substitute for scrambled eggs. It is made from crumbled tofu, which can mimic the texture of egg. Mixed with some other ingredients, you get a vegan alternative to scramabled eggs. Tofu Scramble is a high-protein, cholesterol-free alternative that is packed with flavor.

This egg-free breakfast or vegan egg breakfast is for anyone who prefers not to eat egg, is allergic to egg or doesn’t want to eat egg due to ethical considerations, but really likes an egg flavor! This vegan egg recipe is made with carefully selected ingredients such as tofu and black salt, and turmeric to not only make it look optically like a stir-fried egg, but also to give it that distinctive egg flavor. It is a nutritious and protein-rich breakfast (or brunch, lunch).

Firm tofu

Tofu is a versatile and high-protein ingredient made from soybeans. Firm tofu is ideal for tofu scramble because it tends to maintain a firm texture and can be diced well. It also absorbs flavors and spices well.

Precious nutritional yeast

Nutritional yeast are often used in vegan and vegetarian dishes to add a savory, cheesy flavor. They are rich in B vitamins and add a delicious umami flavor to your tofu scramble.

Kala namak or black salt

Kala namak, also called black salt, is a special kind of salt that has a slightly sulfurous taste. It is popular in vegan egg recipes because of its ability to add an egg flavor to dishes. Black salt is easy to buy online or in Indian (Asian) stores.

Turmeric

Turmeric is a spice that not only adds yellow color to your tofu scramble, but also a (very) mild earthy flavor. Moreover, turmeric is known for its health benefits due to its anti-inflammatory and antioxidant properties. For this dish we use turmeric powder, but you can also use fresh turmeric, grate about half an inch of turmeric.

Soy or oat creamer

Soy or oat cream is a dairy-free alternative to regular cream and will make the tofu scramble creamier. It also adds a subtle sweetness to the dish.

Yes, tofu is an excellent source of protein and contains healthy fats making it a healthy choice

Can I prepare tofu scramble ahead of time?

Yes, you can prepare the tofu scramble and store it in the refrigerator to reheat later or eat it cold.

What vegetables go best with tofu scramble?

You can experiment with different vegetables, but tofu scramble is extra delicious with vegetables like onion, mushrooms, spring onion, spinach and tomatoes.

Are there other (dried) herbs and spices I can add to my tofu scramble?

Of course, you can experiment with spices such as oregano, thyme, powdered cumin, (smoked) onion powder, garlic powder, (smoked) paprika powder, curry powder or chili flakes to add extra flavor to your tofu scramble.

Fresh herbs like parsley and chives are also delicious with vegan tofu scramble.

Experiment with mustard and ketchup, too!

Can I also use vegan mayonnaise instead of vegan cooking cream?

Yes indeed! Just keep in mind that a vegan mayonnaise contains more fats and therefore more calories. This will change the nutritional value per serving.

What can I replace bread with?

You can substitute bread with a large whole wheat tortilla wrap or whole wheat pita. Vegan seitan sausages are also delicious paired with this tofu scramble. Seitan sausages are made from wheat protein. You can find these ready-made sausages in health food stores.

Ingredients

  • 400g firm tofu, crumbled
  • 3 tablespoons (15g) nutritional yeast flakes
  • 75ml of soy cooking cream
    Alternative 1: oat or rice cooking cream
    Alternative 2: unsweetened soy milk or unsweetened oat milk or other plant-based milk of your choice
  • 1/2 teaspoon kala namak or black salt
  • 1/4teaspoon turmeric powder
  • Optional and to taste: ground black pepper to taste
  • Optional: 2 thick slices (1 slice per serving of ±60g per slice) of fresh or toasted whole wheat bread

Recipe

  1. Drain the tofu and crumble the tofu with your hands so that it resembles chunks of scrambled eggs;
  2. Heat a frying pan over medium heat and add a very small amount of oil if necessary;
  3. Add the crumbled tofu and stir into the pan. Keep it short, because you don’t want to dry out the tofu too much;
  4. After about 30-60 seconds add the turmeric powder, nutritional yeast flakes, Kala namak and black pepper. Stir and mix everything together;
  5. When everything is well mixed, lower the heat to low and add the cooking cream. Keep stirring. Your tofu scramble now needs another 30-60 sec and you’re done!
  6. Serve your delicious tofu scramble with a slice of whole wheat bread.
    Tip: Delicious with a little ketchup or sriracha!

Pro Tip 1. Add onion

The tofu scramble is also delicious with fried onion! A sautéed onion adds a mildly sweet/spicy flavor to the tofu scramble. If you want to add this, do so before adding the tofu to the pan. Use a small amount (1 teaspoon) of oil or add small bits of water so that the onion does not burn and can cook until translucent.

Pro Tip 2. Make a vegan egg salad

Add 2-3 tbsp vegan mayonnaise, 1 teaspoon mustard, chopped pickles, chives or celery and you have vegan egg salad!
